Now, it does not take a professional chef to figure out how to make a Chicken Caesar Salad, but one of my 101 in 1001 is to make 50 recipes from books or magazines I already own. Sunday night I had Betsy pick out what she wanted to eat from one of our cookbooks…and Voila! Chicken Caesar Salad it was!
Chicken Caesar Salad Recipe
Ingredients
1 lb boneless, skinless chicken breasts cut into strips
3/4 Caeser Salad Dressing, divided
1 head of romaine lettuce
1 Cup seasoned croutons
1/2 cup grated parmesan cheese
Directions
Cook and stir chicken in 1/4 cup of the dressing in a non stick skillet on medium-high heat until cooked through (approx 8 minutes)
Toss chicken, greens, croutons, and cheese in a large salad bowl.
Top with remaining 1/2 dressing before serving; toss lightly.

YUMMY!! That looks really delicious. I have chicken breast in the freezer… I could make that later in the week. I just have to go grocery shopping because I don’t have any other ingredients except the croutons. =)
