Easy Spicy Chicken Salad Recipe

Chicken Salad is one of my favorites as the temperature starts rising!

There are so many different recipes for Chicken Salad that you could you could have a different Chicken Salad every night of the week for months! Plus, the fact that you can it is so versatile – Put it on crackers, on a croissant, on a leaf of lettuce. The options are endless. It is an easy leftover (if you have any!) and I always take it to work for lunch the next day.

However, I tend to like this Spicy Chicken Salad Recipe the best because it has a small kick and it is super easy to make! But, don’t forget, plan on letting it chill for at least two hours before serving so all the flavors can mesh together.

Easy Spicy Chicken Salad Recipe

Ingredients

  • 3 cups cooked shredded or chopped chicken
  • 1/2 cup chopped celery
  • 1/3 cup chopped onion
  • 1/3 cup light mayo
  • 1/4 fresh lemon juice
  • 2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • Crackers or Pita chips for serving

Instructions

  1. Mix chicken, celery and onions in large bowl. Add mayo, lemon juice, chili powder, cayenne pepper. Mix lightly.
  2. Refrigerate at least two hours or until chilled
  3. Serve with grapes and crackers.
