Summer Tortellini Salad

I don’t know about you, but I like use the oven as little as possible in the Summer so I try to create easy summer salad recipes.

This Summer Tortellini Salad is a version based on one my mom used to make. She added artichokes, but I don’t like artichokes so I leave them out, but feel free to add some to your recipe!

The only heat this Summer Tortellini Salad requires you to use in your oven is to boil water. Soil boil in the morning when it is cooler outside, refrigerate it and then serve it for dinner! The only other heat you may get is the heat from your kids’ bodies when they hug you for making such a delicious dinner!

Summer Tortellini Salad

Ingredients

1 package refrigerated three cheese tortellini (16 oz)

4 oz sliced pepperoni

3 green onions, diced

1 can sliced black olives (2.25 oz)

4 sticks string cheese (mozzarella), sliced

1/3 cup extra virgin olive oil

1 1/2 TBS balsamic vinegar

1 1/2 TBS white vinegar

1 TSP Italian Herb Seasoning

Directions

  1. Cook tortellini according to the package instructions. Drain and rinse with cold water.
  2. Put tortellini, pepperoni, green onions, olives, and cheese in a large salad bowl.
  3. In a small bowl, whisk olive oil, balsamic vinegar, white vinegar, Italian seasonings, and salt and pepper (to taste) together.
  4. Pour over tortellini salad and gently stir.
  5. Refrigerate for at least 2 hours before serving.
