This Summer Tortellini Salad is a version based on one my mom used to make. She added artichokes, but I don't like artichokes so I leave them out, but feel free to add some to your recipe!
Ingredients
1 package refrigerated three cheese tortellini (16 oz)
4 oz sliced pepperoni
3 green onions, diced
1 can sliced black olives (2.25 oz)
4 sticks string cheese (mozzarella), sliced
⅓ cup extra virgin olive oil
1½ TBS balsamic vinegar
1½ TBS white vinegar
1 TSP Italian Herb Seasoning
Instructions
Cook tortellini according to the package instructions. Drain and rinse with cold water.
Put tortellini, pepperoni, green onions, olives, and cheese in a large salad bowl.
In a small bowl, whisk olive oil, balsamic vinegar, white vinegar, Italian seasonings, and salt and pepper (to taste) together.
Pour over tortellini salad and gently stir.
Refrigerate for at least 2 hours before serving.
