Yummy Easy Apple Cinnamon Cake Recipe!
My plan this year was to head over to an apple orchard, pick some apples, then make some apple recipes. The problem with that? It has been like 5 million degrees here. No, seriously, it has been in the 9o’s when it should have been in the low 80’s or high 70’s. However, next weekend is looking pretty good, so I may try to go to an apple orchard next weekend.
This Apple Cinnamon Cake is super easy to make, and even if it does not feel like it, when you eat it you think of fall. Check it out for yourself.
Apple Cinnamon Cake Recipe
Ingredients
- FOR THE CAKE:
- 3 cups flour
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 2 cups plain yogurt
- 1 stick butter
- 2 green apples, peeled, cored, sliced thin
- For the swirls:
- 3/4 cup brown sugar
- 1 tablespoon cinnamon
Instructions
- Preheat oven to 375 degrees.
- In a small bowl, mix together brown sugar and cinnamon. Set aside.
- In a large microwavable bowl, melt the butter until soft. Add sugar, eggs, vanilla, baking powder and baking soda, yogurt, and salt. Mix.
- Once mixed, add the flour in batches, making sure to stir between each addition.
- Butter and flour a large bundt pan. Pour in half of the batter and sprinkle half of the swirls mixture over it.
- Using a fork, push the swirls into the batter. Place half of the apple slices over the batter.
- Repeat with the second half of the batter, sprinkling almost all of the swirls (leave 2 tablespoons) over the top and place the remaining apple slices on top.
- Sprinkle the remaining swirls over the apple slices.
- Bake for about 40 minutes or until knife comes out clean when inserted into cake.
