Sparkling Strawberry Lemonade
  • 1 ½ Cups Fresh Squeezed Lemon Juice (approximately 10 lemons)
  • 1 Cup Sugar
  • 1 Cup Water
  • ½ pound strawberries, plus extra for serving
  • 3 Cups Club Soda
  1. Combine 1 Cup sugar and 1 Cup of water in a small saucepan and bring to a boil. Reduce heat and simmer until sugar is dissolved, approximately 4 minutes. Remove from heat and let cool completely.
  2. While sugar water is boiling, squeeze 1 ½ cups of lemon juice. (Use a reamer or juicer.)
  3. In a blender, puree the strawberries with ¼ cup lemon juice. Strain into pitcher. Add remaining lemon juice and sugar syrup to pitcher, stir, then refrigerate until cool.
  4. Just before serving, stir in the club soda. Serve over ice and garnish with strawberries.
